In a matter of minutes, make a plate of lightly-fried fritters you can serve at any time of the day. These sweet potato fritters are similar to potato pancakes or latkes but are fried in just a small bit of oil. Add the tart cranberry relish to balance out the palate. Ingredients:
Fritters
- 5 Tbsp. oil
- 2 lb. sweet potatoes (shredded and drained)
- 2 cups sweet corn
- 1 cup cornmeal
- 1 Tbsp. salt
- 1 Tbsp. pepper
- 1 tsp. cayenne (or more, to taste)
- 2-3 eggs (will vary; use enough to hold mixture together)
Relish
- 1 bag fresh cranberries
- 2 jalapenos - seeded
- 2 Tbsp. orange zest
- juice from 2 oranges
- 1 bunch cilantro
- 1 tsp. salt
- 1 tsp. pepper
- Optional: 1-2 Tbsp. honey (to taste)
Directions:
Fritters:
- Mix sweet potato shreds, sweet Corn, cornmeal, salt, pepper, cayenne and eggs in a large bowl.
- Form into 3-inch wide patties.
- Heat oil in a large skillet. Cook patties 2-3 minutes on each side until they are golden brown.
- Place the cooked fritters on a sheet tray in the oven at 250 degrees to keep warm until served.
Relish:
- Put cranberries, jalapenos, orange zest, orange juice, cilantro, salt and pepper into a blender. Add honey to taste, if using.
- Blend until chunky.
- Refrigerate until service.
