Black Bean Soup Recipe

- 2 cups black beans - rinsed and soaked over night with 1 quart of water
- 1 quart water
- 1 tbsp. fresh rosemary chopped
- 1 tsp. fresh oregano chopped
- 1 tsp. fresh sage chopped
- 1-2 chipotle peppers chopped
- Olive oil
- 1 yellow onion - diced
- 1 red bell pepper - seeded and diced
- 2 celery stalks - diced
- 1 medium tomato - seeded and diced
- 2 cloves garlic - minced
- 1/4 cup cilantro - chopped
- Salt and pepper
- Sour cream
- White cheese
Bring beans (with the soaking water), water, rosemary, oregano, sage and chipotle peppers to a simmer over medium heat covered. Reduce heat to low and cook for around two hours. One hour into the simmer, begin to check the water level every 20 minutes - if you need to add more to cover the beans, do so. Begin checking mixture about 1 1/2 hours through the simmer. Beans should be soft.
When the beans are getting close to finished, heat a sauté pan over medium-high heat, when the pan is hot, add the olive oil, and garlic. As soon as the garlic begins to turn gold, add the onion, pepper, celery and tomato. Sauté the vegetable until the onions are translucent and add to the beans. Season with salt and pepper.
Just before serving, Stir in the cilantro. Serve with sour cream and shredded cheese. This recipe serves six.
