By the request of previous students, The Chop Shop Butchery is opening an advanced butchery series to the public! We do highly recommend that you attend a WHOLE HOG 101 COURSE before signing up for this one. Limited to 6 people, this class will show you how to cut half of a Heritage breed hog yourself with assistance from professional butchers. You’ll also get to take home a cuts of pork — just in time for the weekend! Locally-sourced libations, charcuterie, and cheeses are included.
