Soup: Ginger-citrus miso with local shiitakes and scallions
Entree: Kaffir lime and chili dusted Hickory Nut Gap pork ossobuco (or portabella) and braised greens atop a rosemary polenta cake with turmeric beurre blanc. Served alongside a spring salad tossed with English cheddar, pickled wasabi shoots, Appalachian hazelnuts, slivered strawberries, and drizzled with thyme balsamic vinaigrette
Dessert: Silky chocolate mousse with cardamom candied pecans and fresh berries
