Bistro Executive Chef Daniel Polk came to Biltmore as a Sous Chef at Stable Café in 2018; he was promoted to Bistro Executive Chef in June 2019. With more than 17 years’ experience in the restaurant industry, Chef Polk has served in a variety of roles including Executive Chef at Back on the Beach in Santa Monica and Executive Chef at The Culver Hotel in Los Angeles, California; Sous Chef at DC Coast and Circle Bistro in Washington, D.C.; and Chef de Cuisine at the Hyatt Regency in Ekaterinburg, Russia, a 5-star luxury property.
