Carson grew up spending summers in Western North Carolina where she completely fell in love with the mountains and the people. She traveled in her younger years where she engaged in learning about people, culture and people’s relationships to to food, nature, and in community. She primarily maintained work in the restaurant business most of her life while getting her education and working in wilderness therapy. She knew she wanted to be of service to people in a way that builds care in community and is connected to nature, culture and the food we eat. Carson returned to Western North Carolina in 2000, but this time it was to stay. She set her roots in Asheville, NC and eventually working at a breakfast and juice bar downtown, which she later became the owner and opened up the Over Easy Cafe in 2005.

After working most of her life in the restaurant business, Carson manifested her own dream in service to community through the Over Easy Cafe, which has become a staple among locals and tourists alike. At the Over Easy Cafe she prioritizes relationships with her staff, customers, and with local farmers. She respects indigenous foods of Western North Carolina and caring for the animals that provide a food experience that honors the history and land of WNC. Most of all Carson loves supporting others’ passions and dreams. She features local artists and volunteers in a number of different community engagements. Carson loves collaborating with others in the community to food events, coordinates and provides staffing for weddings and other specialty events and supports creative social justice oriented events. Carson shows up with the energy, creativity, and dedication it takes to make things happen in a way that brings joy and builds connection
