We are locally owned, born and raised in Delray Beach. We set off scouring the world for the finest cacao money could buy. We have gotten to know our farmers well through the years. We wire money directly to them paying them up to 5 times the current stock market price of cacao. It is a constant collaboration between us to create the finest chocolate possible making small tweaks each batch. We sort through each and every cacao bean by hand. We roast, we winnow, we pre-refine, we refine, then we refine again just to make sure its silky smooth, 12 microns to be exact almost 5 times as fine as a human hair. After all this the chocolate is conched where we develop our final flavor and make our final tweaks. It is then pumped into a holding tank where we let it rest for a few days (Its been through a lot). The entire process can take up to two weeks. We then deposit the chocolate into blocks where they are aged 1-6 months. We are constantly learning each day, we don’t strive for consistency we strive to get better.
