Miles Macquarrie is the Beverage Director and Co-Owner, along with Matt Christison, Bryan Rackley, and Jesse Smith, of acclaimed Atlanta restaurants Kimball House and Watchman’s Seafood and Spirits. With Macquarrie at the helm, Kimball House is a five-time James Beard Foundation nominee for Outstanding Bar Program and was named one of the Five Best New Cocktail Bars in America by Bon Appetit in its opening year. While Macquarrie’s beverage program at each concept is unique, both focus on refined cocktails that highlight locally sourced and high-quality ingredients.
Born in North Hampton, MA and raised in Port Orange, FL, Macquarrie and lifelong friend Matt Christison moved to Atlanta in 2005 to pursue a career in hospitality. The duo accepted positions at Decatur’s Brick Store Pub, where they met future business partners Bryan Rackley and Jesse Smith. The four quickly bonded and began working towards their dream of opening a restaurant of their own. Macquarrie spent the next several years honing his skills as a mixologist and developing some of Atlanta’s most lauded cocktail programs at Holeman & Finch and Leon’s Full Service. Nearly a decade after meeting, the four friends opened Kimball House in September 2013, followed by their highly-anticipated second concept, Watchman’s Seafood and Spirits, in June 2018.
At both restaurants, Macquarrie and his teams take pride in their efforts towards constant innovation, incorporating seasonal produce alongside house-made bitters and tinctures in unique ways. At Kimball House, Maquarrie’s polished, technique-driven cocktail menu provides the perfect complement to the restaurant’s savory menu and raw bar selections that pay homage to classic American luxury dining. At Watchman’s, Macquarrie focuses on inventive twists on coastal-inspired classics to match the vibe and cuisine of the sustainable seafood-focused restaurant. In addition to serving up original takes on refreshing classics, like the Pain Killer and Classic Daquiri, Macquarrie and his Watchman’s team also offer a themed selection of seasonal libations that changes monthly.
