Summer Edible Plants with Roots Marshall

    Wild edible plants are all around us—you just have to know how to see them. In this beginner-friendly class, naturalist and experienced forager Roots Marshall will introduce participants to edible Summer plants and the habitats where they grow across Western North Carolina.

    We’ll begin with a short indoor session covering the basics of plant identification and responsible foraging practices. Then we’ll head outside into the gardens to learn directly from the landscape. Along the way, Roots will share tips for recognizing edible species, avoiding lookalikes, and building confidence in the field.

    Participants will have the opportunity to sample some of the plants discussed during the class. Please note that independent foraging is not permitted in the Botanical Garden. Wear weather-appropriate clothing and comfortable footwear, as most of the class will take place outdoors and will involve walking.

    This is the Summer course in the “Edible Plants in Every Season” class series.

    INSTRUCTOR BIO: Roots (he/she) is the Horticulturalist at the Asheville Botanical Garden. He's been exploring the world through plants for as long as he can remember, and has a special love for edible plants. Roots has worked on farms and in gardens for over a decade, and likes to use his experience of wild plants and the natural world to create beautifully naturalistic garden spaces. In his free time he enjoys hiking very slowly, baking, and getting muddy. His favorite edible plant is white walnut.
