Ingredients
- 1/2 cup Highland Brewing Company Oatmeal Porter
- 1/2 cup seltzer water or club soda
- 1 tbsp. oil
- 1 egg
- 1/2 tsp. cayenne pepper
- 1 tsp. kosher or sea salt
- 1 cup cake or pastry flour
- 1/4 tsp. mustard powder
Preparation
Combine all ingredients except flour, using whisk, stick blender or food processor. Add flour last, and process only until mixed. Slice large sweet onions into rings. Separate rings. Soak in a small amount of milk for 10 minutes. Drain and dip in batter. Fry small batches in hot oil (365 degrees), turning once. Remove and drain on paper towels before serving. Season with salt and pepper (a little hot salt or cayenne, if desired) while still hot from fryer.
