Prime Rib with Roasted Potatoes

Prime RibIngredients

3-4 lb. Beef Rib Roast
1 bunch of Rosemary
1 head of Garlic
2 tbsp. Black Pepper
4 tbsp. Kosher Salt
¼ cup Olive Oil
3 lb. of Roasting Potatoes

Directions

Mince rosemary and garlic reserve ¼ of total for roasted potatoes. Mix ¾ garlic and rosemary with salt and pepper. Rub beef all over with mixture and let sit for 30min. Cut potatoes into large chunks and toss with reserved garlic, rosemary and olive oil. Bake potatoes on a cookie sheet in 400 degree oven for 30-45min (flip potatoes every 10-15min). Roast beef in a 500 degree oven for 15-20min the lower temp to 275 degrees and cook until prepared to your liking. (100 degrees rare, 110 degrees med-rare, and 120 degrees for med)
