Alcaparrado Recipe

OlivesSavor this fresh alcaparrado recipe from a local restaurant.

Ingredients
  • 1 cup green olives
  • 1/2 cup roasted red peppers
  • 1/4 capers
  • Zest of 1/2 orange
  • 3/4 cup quailty olive oil
Preparation

Chop first four ingredients w/ knife or food processor, add oil, mix, season with salt and pepper. Spread on sandwiches or use with fish, shellfish or vegetables.
